Here are a few more ideas for using your zucchini/yellow squash. Have fun!
- Zucchini Quiche (Better Homes and Gardens) My mom has a similar recipe that has sliced tomatoes on top of the quiche; I prefer the tomato-dill relish.
- Zucchini-Crusted Pizza (Moosewood Cookbook) I’d make two of these if you’re feeding 3+ people.
- Grilled Zucchini (Us) Just slice lengthwise, brush with olive oil, and sprinkle on salt and pepper or (my favorite) lemon pepper.
- Zucchini Spread (Philly Homegrown) I haven’t tried this one but it looks awesome and uses a ton of zucchini.
As you can probably guess, I’m not a big zucchini bread person. I’ve just never been that into it. If I find a recipe for it I actually like, I’ll let you know.
